Kristen Chan joined CHP/PCOR in July 2006 as a research assistant working with core faculty member Paul Wise on child health and global health projects. She received a Master's of Applied Science in Chemical Engineering from Ryerson University (Toronto). She has an interest in multidisciplinary research and her master's thesis focused on food science and engineering, using mathematical modeling and computer simulation to predict and examine phase separation in various materials and its applications in food science. Her previous work experience includes working with professors on product development in materials science and low-fat food products. She has published a book chapter on phase separation in food biopolymer mixtures and three papers on phase separation in polymer blends.
